Delicious Recipe for Apple Honey/Maple Bundt Cake

 I made this today and it was delicious. Thought you might like the recipe.  I took it out to Sarah and Gregorio’s house and Nico was all ready for a second piece when I had to break it to him that his mom didn’t want him to eat more cake this evening. His little face brightened though when I told him he could eat another piece tomorrow.

Do you need a better endorsement than that?

Apple Maple/Honey Bundt Cake

“The batter of this moist and delicious cake could also be baked in two loaf pans. (I used a bundt pan and it turned out perfectly. ) Reduce baking time to 45 minutes for loaf pans. To make this even more special, dust with confectioners’ sugar, sprinkle with cinnamon, or drizzle with warm honey before serving.” (I found that the cake is delicious even without the warm honey drizzle.)


1 cup white sugar (I substituted maple sugar here)

1 cup vegetable oil

2 eggs 

1 cup honey (I substituted 1/4 honey and 1/2 maple syrup

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground allspice

3 apples – peeled, cored and shredded (I used approximately 6 apples and cut them into chunks)

3/4 cup chopped walnuts (I left out the walnuts and added more apples though the walnuts would be delicious)


  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9-inch Bundt pan or 2 loaf pans.
  • In a large bowl, stir together the (maple) sugar and oil. Beat in the eggs until light, then stir in the honey/maple syrup and vanilla. Combine the flour, baking powder, baking soda, salt, cinnamon and allspice; stir into the batter just until moistened. Fold in the apples and nuts (or omit).   • Bake Bundt cake until a toothpick inserted into the crown comes out clean, about one hour. (Start checking for doneness after 50 minutes.) Let cool for 10 to 15 minutes before inverting onto a plate and tapping out of the pan. If desired, dust with confectioners’ sugar, sprinkle with cinnamon, or drizzle with warm honey before serving.
