As a non-beef eater, I am happy to report that I learned a while back that I can produce a decent meatloaf made with ground turkey instead of beef. It’s been a staple since then and is excellent with mashed potatoes and green beans, or with a green salad. Perfect comfort food. But recently, I stumbled upon a recipe that added a few more tasty ingredients to my basic turkey meatloaf, and I want to make sure I don’t forget these new additions. Therefore, I am sharing this here on my blog, so I can find it and also to offer you a new and improved way to make turkey meatloaf quite delectable. I am putting my regular recipe below and will show the additions at the bottom. If you try my newly-refurbished recipe, please let me know. Len’s New Turkey Meatloaf Recipe with a Few Additions
1 1/2 pound lean ground turkey
1 cup milk or chicken broth (The cup of liquid is excluded in the new recipe I found. I will cut it in half since the apples will add moisture, but I’m not willing to exclude the chicken broth completely. If you do, please tell me how it works.)
1 tbsp. Worcestershire sauce
2 teaspoon chopped fresh basil or 1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon mustard
1/4 teaspoon pepper
1 chopped clove garlic
1 egg
3/4 cup ground cracker crumbs
1 onion, chopped
1/2 cup red pepper
1/4 cup ketchup
Here are the additions:
1 medium apple, cored and grated (6 ounces)
3/4 cup panko bread crumbs instead of regular bread crumbs
Instead of just ketchup, make this sauce instead:
- ½ cup ketchup
- 1 tablespoon packed brown sugar
- 1 teaspoon vinegar (cider, distilled, or white or red wine)
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon black pepper
Heat oven to 350 degrees. Mix all ingredients except ketchup (and other ingredients for the sauce). Spread mixture in greased 8 x 4 or 9 x 5 inch loaf pan. Spread sauce over.
Bake uncovered 1 – 1 1/4 hours or until the thermometer reads at least 160 degrees. Let stand 5 minutes. Remove from pan. Enjoy.
