Yesterday, I visited daughter Sarah and her family in South Pasadena. My granddaughter Lyla and I decided to make cookies. Unfortunately, Sarah was out of flour so we used pancake mix instead. We made a batch of blueberry cookies and also a batch with chocolate chips. The cookies turned out remarkably well. Lyla and I were pleased and my grandson Nico thought they were excellent. So, when you don’t have flour around, try this instead.
Basic cookie dough.
2 cups pancake mix
2 tablespoons maple syrup
2 tablespoons honey
1 teaspoon vanilla
I cup milk.
I cup either chocolate chips or blueberries (or another kind of fruit)
First stir all dough ingredients together
Then fold in chocolate chips, blueberries, or whatever might be good.
Place the cookies by using a tablespoon and a butter knife
Bake at 350 degrees for ten minutes. Let cool and serve.
