Turkey Meatloaf: Nico’s New Favorite

When I saw my grandson Nico recently, he let me know that turkey meatloaf is what he wants me to make for him for our combination Christmas/January birthday celebration. I have already made and frozen stuffed shells for the big day but will certainly accommodate Nico with turkey meatloaf. I suspect I’ll also make mashed potatoes because who can eat meatloaf without mashed potatoes?

I’m always happy when my kids or grandkids like my cooking. That is something that most certainly makes me happy.

The meatloaf recipe below is tried and true. Every boy I know tends to love this turkey meatloaf. At least two of my daugthers’ boyfriends requested my meatloaf for their birthdays. So, that should tell you something.

This recipe is quick and easy. The best kind!

Turkey Meatloaf

1 1/2 pound lean ground turkey
1 cup milk or chicken broth
1 tbsp. Worcestershire sauce
2 teaspoon chopped fresh basil or 1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon mustard
1/4 teaspoon pepper
1 chopped clove garlic
1 egg
3/4 cup ground cracker crumbs
1 onion, chopped
1/2 cup red pepper
1/4 cup ketchup

Heat oven to 350 degrees. Mix all ingredients except ketchup. Spread mixture in greased 8 x 4 or 9 x 5-inch loaf pan. Spread ketchup over.

Bake uncovered 1 – 1 1/4 hours or until the thermometer reads at least 160 degrees. Let stand for 5 minutes. Remove from pan.

    Sounds good, but okay if I omit red peppers. They certainly add a colorful note, but I can’t abide bell peppers of any color! Happy Birthday to Nico.

  2. Should be good without the peppers. I use chicken broth instead of milk, by the way. I think you’ll like this recipe. Tasty.
